The duo behind The Greens bowling club in North Sydney and Acre Eatery in Camperdown is poised to open The Fernery in December.

The rooftop restaurant and bar will have one of the city’s best views over the Opera House and the Harbour Bridge.

“We came across the space [above the Mosman Club] and just thought, ‘Wow, what an under-utilised area’. It’s a great opportunity to bring a rooftop experience to the [neighbourhood],” says Tully.

Urban farmer Adrian Baiada, who helped build the farm that surrounds Acre, has landscaped an outdoor garden, which will drive most of the menu. It’s where you’ll see head chef Gavin Gray (Catalina) and Mitchell Davis (former executive chef at Huxley’s) plucking ingredients from planter boxes that will sit alongside hanging greenery and flowers. Pony Design Co (also behind Acre and The Greens) is taking care of the design.

The menu will also offer platters of meat cooked in a Josper grill (part grill, part oven).

A dedicated rosé bar will feature seven different types on tap. “Rosé is growing significantly, there are some fantastic ones out there,” says Tully. Cocktails will also spotlight the wine, finished off with herbs from the rooftop garden.

A dedicated gin corner will pour Australian distillers.

The Fernery will open on December 1 above the Mosman Club on Military Road.
