The long-standing Surry Hills pub The Dolphin has been taken over by veteran restaurateur Maurice Terzini and the guys behind Hotel Harry. Three main elements will unfold gradually: a public bar, a dining room and a wine room. Stage one is the public bar, which will open its doors to the public tomorrow, from 5pm.
“We are developing it over a period of time, but at the moment we have made basic changes, like introducing better-quality products. We expected – and are getting – some shtick from locals that have been going there for some time, but hopefully quality will prevail,” Maurice Terzini says.
The team is firm on the fact that there will be no post-mix. Instead, it will be the first public bar in Australia where you can find a premium house pour range of spirits muddled with bottled Australian mixers, fresh fruit and giant cubes of ice. The Pony (a 140ml glass) has been brought back to life alongside James Boags XXX Ale, a NSW exclusive. Lenny Opai (Icebergs Dining Room and Bar and Bayswater Brasserie) curates the spirit and cocktail menu.
Executive chef Monty Koludrovic will be serving the kind of counter-style bar food you would expect at a pub, somewhere between Italy and Australia. There’s everything from steak and chips to chicken and pizza, but all done well and with fresh, local produce. Choose from golden-fried polenta chips or the classic Bar Harry Sandwich (taken from the canals of Venice). After a few pony's, move onto the spaghetti puttanesca or the crumbled chicken with lemon and guanciale.
George Livissianis, the creative brain behind the interiors of restaurants such as Cho Cho San and The Apollo, is in charge of the re-design. Black-and-white graffiti-style couches by the "artist in residence" Beni Single have been wrapped in plastic, walls have been kept bare and white-washed in certain sections, and in others wrapped in a Christo inspired installation process and punctuated with artistic highlights by installation artist, Tracey Deep.
Dining Room and Wine Room opening dates will be announced soon.
