After several weeks of serious, secretive renovations and a quiet round of practice runs, Woollahra stalwart restaurant Claude’s is set to unveil its new look.
“The soft launches have been going great!” urges owner/chef Chui Lee Luk. “It has been so wonderful to see the transformation of the space, not only in terms of look and feel, but to see how the atmosphere has also changed. It's warm, dynamic and fun and this reflects in the way diners have adopted it.”
The refurbishment is the collaborative work of Luk and interior architect Pascale Gomes-McNabb, along with fashion designer Gary Bigeni, focusing on hospitality for the first time via the design of the bespoke uniforms.
Gomes McNabb is well known on the Melbourne and now Sydney restaurant scene, having designed interiors for establishments including Cumulus Inc., Cutler & Co and Bentley Bar. The spotlight at the new look Claude’s is squarely on the line-up of contrasting textures, surfaces and colours.
The downstairs has been modelled as the bar, with the new look set to bring Claude’s back to its roots as a neighbourhood local, with bar food including dishes like pork jowl and black fungus sandwich. Upstairs, the restaurant showcases the much loved food of Luk and head chef Ben Sears as a degustation-only menu with touches that include Iberian ham and abalone.
“Diners can expect a more open and expressive space – less whisper quiet, more atmospheric,” says Luk. “Downstairs there's now a bar that's perfect for everything from dropping in for a quick glass of wine and a shared plate, to a la carte dinner with friends, while upstairs is a plush jewel-box of a dining room that blows the cobwebs off the notion of fine dining. It's about indulgence, exploring creativity…and having a bit of fun with it!”
We’re looking forward to seeing what they’ve done with the new space when it opens to the public on Wednesday July 11, with the bar opening next week on July 18.
