Sydney chef and restaurateur Kylie Kwong (Billy Kwong) has held the reins of Carriageworks Night Market for the past two years. This year, she’s curated 60 stalls and invited chefs to create a plate reflecting the true nature of Australia.
“We’re excited to share the diversity of unique flavours and textures of stunning native Australian flora and fauna. Visitors will be able to sample unmistakably Australian dishes from some of the country’s most exciting chefs,” says Kwong.
For one night in February, Kwong will bring a taste of her own restaurant Billy Kwong in the form of Moreton Bay bug tails sandwiched inside steamed organic, savoury pancakes with munyeroo and fresh sea urchin.
Outdoor diners can also expect minced kangaroo picadillo empanadas from Danielle Alvarez of Fred’s; Nomad is offering house-made charcuterie from wallaby, kangaroo and other locally-sourced animals; and James Viles of Biota will be serving kangaroo bolognese toasties, prawn and myrtle doughnuts, as well as crocodile and riberry pemmicans.
Chat Thai will unveil deep-fired snapper with green mango and a finger lime salad, while Paper Bird will be plating California toast with crab, avocado, tobiko and finger lime on rye.
Flour and Stone plans to bake quandong macadamia sablé tarts to finish (old-fashioned vanilla sponge with lemon verbena and stewed peaches).
After all of that, you’ll need a drink and there’s plenty on offer. You’ll find a cold brew from local Marrickville brewer Wildflower and cocktails from the recently opened Newtown bar She Loves You including Desert Lime Dark and Stormys and Økar Ruby Rosé Spritzes.
Carriageworks director Lisa Havilah has also announced there will be an original artwork from Yarrenyty Arltere Artists on display: Those poor three women with birds on their heads: Lucky they have coolamons full up with bush foods! It’s by a group of female artists who are passionate about sewing and call themselves The Sewers of Larapinta.
Alongside local DJs there will be a live performance by internationally renowned Australian composer Elena Kats-Chernin, who will perform her piano piece Road to Harvest, which was written for the Fair Trade movement.
Dwayne Bannon-Harrison (founder and managing director of Ngaran Ngaran Culture Awareness) will demonstrate the art of traditional fire making as well as discussing the importance of fire and smoke in food. Representatives from Oz Harvest will be presenting talks, too.
