Buzo may have shut the doors on Jersey Road, but there’s plenty more planned for the Woollahra site with chef collaborative Pinbone opening in the same spot. The dining collective that includes chefs Mike Eggert (ex-Duke, Billly Kwong), Jemma Whiteman (ex-Three Blue Ducks, Berta and Billy Kwong) and front of house Berri Eggert (Bar at the End of the Wharf, Moncur Terrace) is excited to turn their popular pop-up reputation (seen at Three Blue Ducks, Berkelouw and Buzo) into a permanent dining experience in conjunction with the Buzo team.
“We’ve been working with the Wine Library/Buzo collective for a long time and they’re good friends of ours and we respect them as a business model,” says Berri Eggert of the new venture.
“They were opening Vincent and that meant that they would have Wine Library and Vincent and they felt there wasn’t room for Buzo, so they came to us with the idea that we might go in and do something a bit different.”
The Pinbone trio had always hoped to have a permanent place of their own, but previous opportunities hadn’t been quite right. And while they might not have planned on a split-level layout, everything else about the opportunity was too good to pass up.
“We feel they really get us and they are supportive and there’s plenty of autonomy,” says Berri.
After a quick coat of paint and the installation of some new cupboards, the team is excited to open the doors. The menu will focus on produce-driven share plates and snacks, accommodating dietary requirements with gluten-free, vegetarian and dairy-free options. The team are known for drawing their inspiration from flavour combinations rather than one school of cooking.
