Josh Arthurs is a leader in Sydney’s burger scene. His Burgers by Josh brand of pop-ups, kitchen takeovers and pub residencies specialise in towering, American-style burgers that are spectacular-looking and delicious. His most recent outlet was a residency at the Annandale Hotel, which attracted a queue that ran down Parramatta Road. “The Annandale takeover was double the turnout I had expected,” says Arthurs.
The new Burgers by Josh pop-up will be a kitchen takeover at Darlinghurst’s Prince William Hotel. Arthurs has confirmed a two-month stint with the hotel. “I am scoping out this location … it has potential for a permanent set-up,” Arthurs says.
An opening date hasn’t been set yet because of the extensive renovation necessary, but late-May is likely. Arthurs focuses on accessibility: he’s given the north shore and inner west a taste. Now he will be within walking distance of Surry Hills, Potts Point and Sydney’s CBD.
The menu will mimic The Annandale Hotel’s. It will include The Infamous Primo, a double-Wagyu, double-cheese and bacon burger recognised as the Burgers by Josh signature; The Scorpio, a spicy chicken burger with slaw and special sauce; and the New Yorker, the first burger Arthurs created after establishing his brand a year ago, which will include Wagyu, cheese, sauerkraut, pastrami and Russian dressing.
Boutique and craft beers will be available, and for the first time, cocktails. The space will be decorated with graffiti and murals. Arthurs also hopes to serve meals until 3am on weekends.
