Black Star Pastry is unwrapping a new dessert next week at the Night Noodle Markets in Hyde Park.

The multi-layered mango cake makes the most of the sweetness and in-season freshness of mangoes.

Known for his innovative flavours (including the famous watermelon cake and more recently the Japanese forest cake), Christopher Thé makes all his pastries by hand, and draws on the seasons for inspiration.

The summertime cake begins with a layer of gingerbread sponge. Then there’s coconut-and-lavender sago (an extract from tropical palm stems); sweet mango cream; fresh blueberries; slivers of fresh mango; crystallised violets and lilacs; and coriander and coconut pearls.

The cakes will be available from October 5 at the Sydney Night Noodle Markets in Hyde Park and at all Black Star Pastry stores until mangoes are out of season.
