Kenny Takayama, ex-head chef at bills, Darlinghurst, has dreamed of opening his own cafe since high school.

Takayama serve three sandwiches, three salads and three tartines, each stuffed or topped with different weekly specials. “When I say I’m opening a cafe everyone says, ‘What’s your menu? What’s your signature?’ There’s no special, everything is special.” Aside from outsourcing coffee production and bread baking to Mecca and, hopefully, Brickfields, Takayama will do everything in-house with the help of two more bills graduates, Yuji Oikubo and Jared Cochran.

The plan is to keep everything completely fresh and made to order. Takayama hopes by the end of each day everything in the cafe will be exhausted. “I’ve done it at bills for three years, fresh every day, empty every day,” he says.

The menu will also feature a range of gluten free, dairy free and vegan options. The cafe will seat only 50 people, with half the tables outside among Takayama’s herbs. The other half inside will be surrounded by white tiles, wooden panels and copper lines. Oratnek will open on Pitt Street, Redfern on July 20.
