The latest to join the ever-expanding Wintergarden line-up is Bar Pho – founder and pho expert Tina Do announced it will open on Tuesday October 6. The new space will give Bar Pho its first bricks-and-mortar spot after gathering loyal followers from the success of its Bondi and Carriageworks Market stalls and Surry Hills pop-ups.
“The food court is a 700 seater,” says Do. “We’ll be able to have sit-in options and takeaway options. And people will be able to have pho for breakfast. There’s nowhere in the CBD for soup early in the morning, so we’ll start at 8am for the day.”
With No. 1 Bent Street by Mike, Chur Burger Express and Los Vida already on the cards, Wintergarden is pulling in some much-loved food vendors. For Do it’s the perfect end to her search for a permanent home. She has designed just what she needs with the help of Smith and Carmody Design (designers of Brickfields and Cornersmith).
“We’re having four different types of broth – the first thing you’ll see is all the pots. It’s been great fun designing the space,” says Do, who imported a special heat-regulating cauldron to allow her broths to cook for up to 18 hours and overnight in the new space.
“I won’t be such a gypsy,” she smiles. “And we’ll be cooking out of Wintergarden for markets and festivals.” With a range of pho, salad and rolls, Do is determined that CBD diners will have access to the quality her pho is known for. “There won’t be any short cuts … People in the city move fast and don’t have a lot of time, but they should still have quality food.”
To celebrate it will give away a jar of its famous oi choi oi chilli oil (Vietnamese for “oh my goodness”) with every pho purchase on opening day. The Wintergarden Bar Pho will operate Monday to Friday, but you’ll still be able to find Bar Pho at the Bondi and Carriageworks farmers’ markets every Saturday.
