A vegan restaurant in a historical Australian pub is unusual. Bhavani Baumann and Sacha Joannou are shaking things up, opening a vegan restaurant upstairs at Rozelle’s Red Lion Hotel on September 17, fittingly named The Green Lion. It will offer vegan takes on traditional pub meals. From fish and chips and “not dogs”, to vegan Big Macs, every dish will be cruelty-free, plant-based and delicious.
It’s hard to ignore the rapid rise in vegetarian and vegan dining in Sydney. Last month Roy Morgan Research reported that more than 53 per cent of Australian adults said they are eating less red meat. The same figures show there has been a 30 per cent increase over the past four years in Australia in people adopting a vegetarian or vegan diet.
“I was born into a vegetarian family and by opening something like this I’m hoping to have a personal effect on the environment,” says Bhavani. “I’m not trying to make the whole world go vegan, but offering these vegan dishes may make people less inclined to eat meat, and if that means less factory farming even by a fraction, I will be thrilled,” she says.
Rose Markcrow, head chef of Sadhana Kitchen helped to design the menu and will be in the kitchen two nights a week. Raw Vine Estate, a wine company specialising in vegan blends, will supply the wine.
The Green Lion is slated to open on Saturday September 17. On opening night the kitchen will serve finger-food versions of the best dishes on the menu.
