The latest iteration of the successful Three Blue Ducks collection of restaurants opened at The Lodge in Bellingen in July this year. Now co-founder, chef and author, Darren Robertson, will make his way down the coast to Sydney in November, for an exclusive pop-up event in collaboration with Roku Gin that celebrates the mid-north coast restaurant’s seasonal Asian inspiration, alongside floral, botanical-forward Japanese gin cocktails.

Spanning a Friday dinner and Saturday lunch, the one-off event at Three Blue Ducks in Rosebery will feature two sittings of a four-course menu curated by Robertson and paired with Roku Gin cocktails guided by brand ambassador James Buntin. With both Robertson and Buntin on hand to talk through the pairings, diners will be guided through a twist on the Three Blue Ducks’ new Bellingen menu, which marries premium meat and seafood with the delicate Japanese flavours and techniques Robertson sharpened in his time as head chef at the legendary Tetsuya’s in Sydney.

Think dishes like oysters with ginger and cherry blossom; asparagus with spanner crab mayonnaise and gyokuro togarashi; raw beef with sanshō pepper, green onion and nashi pear; grilled barramundi with fragrant dashi, sencha furikake and sea greens; or smashed cucumber with sakura flower togarashi and pickled wood ear mushroom. Each dish will be designed to reflect the six botanicals used in the creation of Roku Gin: sakura flower, sakura leaf, sencha tea, gyokuro tea, sanshō pepper and yuzu.

The dinner on Friday November 10, 2023 runs 7-9pm, while the lunch on Saturday November 11, 2023 seats from 12-2pm. See more details. Updated on October 27, 2023: these events have now sold out.
