For a long time, coffee in Kogarah was exclusively old school – Segafredo and Lavazza lattes with a sugar or two mixed in. Not anymore. Local man and long-time barista Tobyn Lind is the owner of Kogarah’s very own specialty-coffee bar, Stay Handsome Espresso.
“I wanted to broaden the speciality-coffee range. We found Kogarah lacks that, and I think people are searching for it,” says Lind. The Reformatory Caffeine Lab provides the house blend for milks. Five Senses and Melbourne’s Seven Seeds are used for black coffee. Now Stay Handsome is talking to Edition Coffee Roasters. “We change it every couple of weeks,” says Lind of this rotating selection of single origin coffees.
The menu includes just a few cakes and sandwiches. The pretty, cream-topped cakes come from Little Secrets Bakehouse. The house sandwiches are Italian style with cured meats, cheese or eggplant fritters. They’re by Sydney sourdough bakery, Luxe.
Lind plans to install a kitchen above the dental clinic (owned by Lind senior) that his courtyard cafe fronts. “We want to do more of a menu,” he says, hinting at something South American-inspired, or maybe a sauce-heavy, rustic Italian breakfast.
Before then it will run pop-ups such as the one it did previously with Two Guys Burgers. “We’re going to have them back. We’ve applied for a liquor license, so we’ll do burgers and beers,” says Lind. “We really want to link up with new, up-and-coming people to showcase their stuff.”
Almost the entire cafe is squeezed into the dentist’s courtyard space. On sunny days – with its thatched chairs and mini coffee counter – this evokes images of park-side French bistros or canal-hugging Italian coffee bars.
