A Moment For: The Cheesy Short Rib Sandwich at a New Sydney Wine Bar

Rovollo hit Martin Place with flaming serves of pici carbonara halfway through last year. Now the team is back with The Heritage Room, a wine bar and private dining room (seating 25 in each) in the neighbouring space.

Executive chef Cami Feliciano oversees both, and the wine bar is already off and running, sending out a menu bolstered by house-made pastas, snacks and a couple of particularly good-looking sandwiches. Giulia Ceruzzi is the newly appointed head somm, who brings a 200-bottle list and experience at Lumi, Fratelli Paradiso and 10 William St.

Expect a focus on Tuscan varieties to star, along with rare Italian whites. But, back to that sandwich. It’s available till midnight, but even better during lunch in combo with a glass of wine. Here are all the details.

What: short-rib schiacciata
How: Feliciano seasons and sears the ribs on the Josper grill, before slow-cooking it for 12 hours overnight. It hits the grill once more, to-order, for another “blast of charcoal flavour”. An AP Bakery schiacciata is sliced open and toasted, then loaded with the meat and a Tuscan fondue that’s spiked with oregano and semi-dried tomatoes. The finished sandwich is sliced in two, then showered in cheese. It arrives with crisps and a duo of house-made sauces on the side: a tangy salsa verde, and a brasato made with battuto, the ribs’ drippings and chianti.
Cost: $32, or $39 with a glass of wine between midday and 3pm, from Tuesday to Friday
