Rollers Bakehouse has one of the best croissants in Sydney. It’s so savoury, so buttery, so very, very layered. No notes. Beyond the golden OG is a line-up of out-there options: a scallion pancake croissant knot served with spicy soy, a charcoal pain au chocolat, and a ham and cheese number that soars with honey and English mustard. But the star of this month’s specials? The Wave.
Think of it like a turbocharged croissant filled with a sweet, nutty ricotta mixture with the texture of a “traditional Sicilian cannoli”.

How: the Rollers team takes its classic hand-laminated croissant dough and cuts it into strips. These are folded into a wave shape that “highlights its buttery layers”. After the dough is baked, it’s filled with a pistachio crème pâtissière, whipped cream and a light whipped ricotta, laced with vanilla and candied orange peel.
