How: the Rollers team takes its classic hand-laminated croissant dough and cuts it into strips. These are folded into a wave shape that “highlights its buttery layers”. After the dough is baked, it’s filled with a pistachio crème pâtissière, whipped cream and a light whipped ricotta, laced with vanilla and candied orange peel.
