The British chef known for his classic approach to seafood – and two Aussie holiday diners at Bannisters in Port Stephens and Mollymook – is on the way to another NSW kitchen: Rick Stein at Coogee Beach.

Together with his wife and business partner Sarah Stein, Rick will take over an oceanfront 224-seater will sit on the ground floor of the incoming Intercontinental Sydney Coogee Beach, which will open in the back half of the year.

“Coogee Beach is yet another stunning coastal location for our Australian restaurant portfolio,” Stein said in a statement. “Perched by the sea and full of the laid-back charm we’ve come to love so much here. It’s especially meaningful for me as my wife Sar grew up in Sydney, so opening a restaurant in her hometown makes this venture all the more special for us both.”

Sarah will be leading both the publicity and interiors, across a restaurant, bar and courtyard terrace.

The menu will stick to the Rick Stein way: standout Aussie seafood, cooked simply – following his longheld personal mantra “nothing is more exhilarating than fresh fish simply cooked”. In Coogee, Nelson Bay mahi mahi will feature alongside pipis from Port Stephens and Ulladulla mackerel. Singapore chilli crab will use blue swimmers from Nelson Bay. Of course, there’ll be fish and chips with mushy peas.

Next door is the always-heaving Coogee Bay Hotel , but the restaurant will join an eastern beaches dining scene known best for fine diner Mimi’s , on the other side of the bay.

Rick Stein at Coogee Beach is slated to open within the Intercontinental Sydney Coogee Beach, 224 Arden Street, in November 2025.
