The bar atop the Art Deco-inspired Primus Hotel is no longer just for guests – rooftop Level Seven opened to the public in September.
The sprawling New York-style deck underwent a redesign by one of the world’s largest architecture firms, Woods Bagot. Nautical-inspired cabanas sit among greenery and fairy lights. A DJ deck will crown the lap pool in the evening.
Boozy popsicles are served all day and night. Lounge around for sunset drinks with jugs of rosé spritz, or Veuve Clicquot Champagne cocktails with pineapple, grapefruit zest, cucumber, celery or capsicum.
“The rooftop has been our hidden secret since the hotel opened. We knew Sydney needed a relaxed yet sophisticated rooftop bar,” says Primus Hotel general manager Daniel Muhor. “We want this venue to be a hub for after-work drinks and lazy weekend afternoon cocktails by the pool.”
Chef Daniel Menzies has designed a simple menu for snacking. “It’s casual, easy food that brings people together,” says Menzies. Jaffles are stuffed with chorizo, mozzarella and jalapenos. Then there’s your classic club sandwich, charcuterie boards, cheese platters and buckets of Sydney rock oysters.
The elevated lap pool is still reserved for hotel guests only. Large group bookings and private events can be accommodated.
