When Dan Kim threw open the doors at Primary Coffee Roasters last week, introductions were unnecessary. “I’ve been here every single day and night for the last month building the place,” says Kim, “so I’ve really gotten to know the locals. It’s great to be able to now serve the neighbourhood and see the vision come together.”
But it’s not just the Potts Point neighbours that were excited to see the establishment's debut. The who’s-who of Sydney’s coffee scene made quick work of getting themselves to the new space. “A lot of old colleagues and fellow roasters have been through already,” Kim says. Honing his coffee craft as head roaster at Brewtown Newtown before opening Heritage Coffee Brewers in Summer Hill, Kim’s new venture puts that expertise squarely into focus.
Roasting alongside cafes like Artificer, Neighbourhood and Skittle Lane at Collective Roasting Solutions, Primary is the latest in a string of venues to open that is more showroom than cafe. Designed by Jake Brainerd, blonde oak and Hamptons-vibe wall panelling bring warmth to the stark white concrete interior. Shiny brewing gadgets cement the venue’s direction as a premium roaster.
“Working with coffees that I love and that excite me is what Primary is all about,” says Kim. Expect to find the highest quality single origins offered as filter and espresso. The seasonal blend is half Ethiopian, half Colombian, and when combined with Sungold Jersey milk from Warrnambool, exudes notes of caramel, chocolate, and nougat.
Apart from the odd house-made madeleine or a croissant from Pennyfours, distractions like breakfast and lunch have been entirely stripped away.
