Poly and Ester’s New Provisions Store Will Keep You Fed From Brekkie to Dinner

Trying to decide what to have for dinner can be tedious – but choosing what’s for breakfast, lunch and snacks as well? That’s too much for us right now. So it’s a good thing a few of our hospitality faves have come together to offer all-day provisions via a new online store.
The teams behind Poly, Ester, and the soon-to-open AP Bakery (from chef Mat Lindsay and hospitality boss Russell Beard of Reuben Hills and Paramount Coffee Project) have launched Poly/Ester Provisions alongside chef and cheesemaker Colin Wood, who makes some of Sydney’s best cheeses.
The new takeaway service offers an ever-changing weekly menu, available from Thursday to Saturday. There are options for all three main meals, as well as morning tea, aperitivo and dessert, alongside pantry and fridge staples.
Poly/Ester Provisions’ first menu features woodfired brown-butter muesli, malted wholewheat sourdough and a four-pack of AP buttermilk croissants, plus lemon polenta cake and native Gulbarn tea. Lunch options include a large potato and cheese borek to share, or fresh bucatini with cacio e pepe sauce.
Colin Wood’s handmade grilled Jersey milk cheese – usually served at Poly – is also available to add to cart. Plus, there’s tinned anchovies, garden pickles, octopus escabeche, barbequed oysters and fermented potato bread. For dinner, there’s sweet and sour lamb shoulder glazed with burnt honey; whole confit spatchcock; cauliflower smoked in a pastrami spice rub and a crisp leafy salad; plus Paris-Brest with dairy three ways (dulce de leche, ricotta panna cotta and sheep’s milk yogurt) or Lamington-flavoured chocolate fudge.
You can also grab condiments and staples for the pantry and fridge – such as sesame sambal (usually served on bone marrow at Ester), Poly’s whipped sesame dip, three kinds of infused butter, Ester’s fermented hot sauce, fresh truffle and a tin of caviar, plus bottles of natty wines.
Orders open on Sundays, for pick-up at Poly or delivery within three kilometres of the CBD for the following Thursday, Friday or Saturday. Order through Cookaborough.
