There's nothing better on a rainy night than honey, butter and spiced pear, and those flavours, so often used to perfection on restaurant dessert menus, were the inspiration for this hot tipple, created by Sebastian Raeburn.

Rich spiced pear and sweet honey are mellowed with the 666 Autumn Butter Vodka.

The chai spices, cinnamon, cardamom, allspice and clove lend complexity without overpowering the delicate acidity of the fresh pear and bitter hints from the walnut.

The pear cleans the finish, leaving a rich buttery and honey flavour that lingers and lingers.[fold]

Pear and Walnut Buttered Toddy

45ml 666 Autumn Butter Vodka
10ml Poire William liqueur
10ml Nocello
15ml fresh lemon juice
20ml pear puree
1 tsp honey
A couple of pinches of chai spices
A pinch of nutmeg

Warm everything in a small saucepan until hot, but don’t let it boil.

Pour carefully into a small teacup.

Garnish with nutmeg and a split vanilla pod.
