Taking its name from the taxidermy business that use to reside on the site, Palmer & Co is a prohibition-style bar that transports you, first underground and then to a different time, harking back to yesteryear in its styling of food, drinks, décor and even glassware.
Celebrating a time when liquor was prohibited but flowed freely, like so many bars of the moment, Palmer & Co has a distinct edge. When a venue comes from Merivale stock, you can almost guarantee it to be well executed.
At this modern day speakeasy the focus is on cocktails and spirits, with over 30 gins, more than 80 whiskies and more 40 tequilas and absinthes, many of which are not available outside Palmer & Co. Staff have been recruited from bars all over the globe and they know their game, so it’s worth engaging them for some advice on what to drink.
Champagne is the next big focus after cocktails and spirits, with 26 to chose from. Fourteen Australian and international wines are also available to sip to the sound of a jazz band from Wednesday to Sunday nights.
In fitting with the bar’s theme, a meat-heavy, Yiddish menu is on offer with daily sandwich specials, meatballs, charcuterie plates and mac and cheese available until close.
Though the prohibition theme isn’t new to the Sydney bar scene, Palmer & Co delivers a most impressive take on it and we have no doubt that word is likely to spread fast about this bar.
