Nick Hildebrandt and Brent Savage – the pair who brought us the much loved Bentley Restaurant & Bar – are at it again, this time stamping their brand of cool onto a new venture, Monopole in Potts Point. The boys have added restaurant manager and sommelier Glen Goodwin to the ownership team and reworked the spot on Macleay Street that once housed Sailors Thai. The doors swung open on December 12 and it’s all about share plates and an excellent drinks list at this contemporary Australian eatery.

“We’re using really great produce, cooked simply,” says Hildebrandt of Savage’s menu. “But there’s creativity. It’s not just a wine bar and the same olives and nuts that you get everywhere – it’s interesting and tasty and we’ll be changing and updating the menu regularly as different produce comes in.”

They’ve been busy since opening last Wednesday, with locals keen to see how the renovations would turn out.
“We’ve had good feedback so far on fit-out and design,” says Hildebrandt. “That was unanimous.” Under the direction of architect Pascal Gomes-McNabb (who also worked her magic when fitting out Bentley), that’s little surprise. The wine list doesn’t disappoint either, with over 500 boutique and more obscure options, including a wide variety by the glass.

Their house-made charcuterie, which has been in the works for the last two months, is a highlight. “We have lots of that hanging. We made it at Bentley. But it’ll be made here, now that we’re in.”

Developing Monopole has been a labour of love for the team. It was no quick process, with a bit of a diversion from the original plan. “We were looking for a venue for maybe two years,” says Hildebrandt. “We initially signed up for The Grace in the city, which fell through, so when we came across this site we decided on a different concept. This suits the neighbourhood.”
