Buzzy Paddington Mexican diner Don Pedros – where you’re encouraged to drink shots of tequila before and after your meal – has taken over Bondi’s beachside Vue Bar for the next few months. While Vue’s menu was already infused with Latin American spirit – serving Margaritas, guacamole and ceviche – now it’s gone full-Mexican.

The food menu’s packed with Don Pedros’s crowd-pleasing Mexican dishes. DIY taco platters come with eight tortillas, lettuce, guacamole, Mexican cheese and condiments, and your choice of protein – prawn, mushroom, crab or lamb. Chunky pineapple salsa adds pizzaz to Baja fish tacos, while guacamole comes sprinkled with zesty lime salt in a traditional molcajete (mortar and pestle).

Other highlights include the chargrilled corn with chipotle aioli, shaved Mexican cheese and a squirt of lime, as well as barramundi ceviche, slow-cooked pork spare ribs and churros with dulce de leche for dipping.

“[It’s] clean traditional food not disguised and … overloaded with spices – the flavours speak for themselves,” co-owner of both Vue and Don Pedros Emma Morris tells Broadsheet. “[Our] chef has been trained by … one of [Don Pedros’s] original co-founders Juan Alvarez, who has brought all his mother’s recipes to the table.”

To drink there’s classic and spicy Margaritas alongside a range of tropical Margs, including watermelon, lychee and coconut. Other cocktails include Palomas, and there’s a range of mezcals and imported beers as well.

While Vue’s views remain, the interior has been given an overhaul for the takeover – think cacti, a bright Day of the Dead mural and colourful patterned throw cushions. “It’s different as it’s a beachfront location, with a huge undercover outdoor area – however we promise to deliver the magic and madness of Don’s. Perhaps a little Puerto Vallarta in Bondi,” says Morris.

“We are bringing the ‘fun dining’ back into Bondi. It’s a fiesta restaurant, it’s a happy place.”

Don Pedros’s Vue Bar pop-up will run for at least the next three months.
