Beloved inner-west hotel the 3 Weeds in Rozelle has been taken over by hospitality giant Merivale. The 130-year-old hotel is the latest addition to the company's inner-west roster, which also includes the Vic on the Park and the Queens Hotel, both in Enmore. This acquisition takes Merivale's bars, events, restaurants and event spaces to more than 70.

A spokesperson for the company tells Broadsheet that Bondi eatery Totti's will be taking over the kitchen, but the pub will continue to operate as normal as plans are made. Totti's, which is in the back of Bondi pub The Royal, also owned by Merivale, is headed up by chefs Mike Eggert (formerly of Pinbone and Mr Liquor's Dirty Italian Disco) and Khan Danis (ex-Rockpool).

The "Italian mash-up" eatery was opened late last year and serves approachable takes on Mediterranean food. Pasta is handmade in-house, as is charcuterie such as salami and 'nduja.

In the coming months Merivale will also open a Totti's-inspired bar in its expanded Ivy precinct in the CBD, meaning punters can eat its puffy-but-dense bread in the east, the west and central Sydney.

An opening date is still yet to be confirmed.
