Vineria Luisa, an old-school Italian restaurant opening soon on Enmore Road, is the latest feather in the caps of Alessandro and Anna Pavoni. They’re behind Maestro Hospitality, which runs a fleet of well-loved Italian joints – including Ormeggio, Postino Osteria and Cibaria.

This July, Broadsheet Access members can be first to eat at Vineria Luisa, at our latest Editor’s Preview.

You’ll enter through its famous purple-and-pink salon facade, be greeted with a Mediterranean-style gin cocktail – the booze list here spotlights gin – and enjoy a meal that showcases that mastery of Italian cuisine that all Maestro venues are known for. Plus, hear from the Pavonis in conversation with Broadsheet ’s Sydney food and drink editor Grace MacKenzie.

Here are three winners that’ll be dished up on the night, and what Anna Pavoni has to say about them.

Suppli al telefono

This is the world’s best bar snack combined with the world’s best pasta sauce. It’s a small, fried bar snack which literally translates to ‘suppli on the telephone’ – because when it’s pulled apart, the melted cheese resembles telephone wires.

Baccala alla Romana

Baccala often features on Alessandro’s menus, and this time, it’s a Roman version. The salted cod is cooked with sultanas and pine nuts in a rich tomato sugo. It’s served with chicory ripassata, garlic, Calabrian chilli and pecorino – super rich and delicious.

Luisa’s tiramisu

I love tiramisu! Each of our venues has a slight variation on the dish, and everyone has their favourite. Luisa’s has cacao nibs, adding a bit of crunch. Tiramisu literally translates to “pick me up”or “cheer me up”.
