A lot has changed in the world – and even just in Sydney – since Bar Patron last served a Margarita. Since it closed for Australia’s first lockdown in March 2020, we’ve endured two years of a global pandemic, several natural disasters and a terribly long lockdown in Sydney. Internally, founding chef Neil Perry has departed the venue and the Rockpool Dining Group has split into two. Phew. But, after all that tumult, Bar Patron will reopen on April 27.
“There is no team keener to reopen than the Bar Patron team. It just came down to the right timing,” says Frank Tucker, president of Pacific Concepts – which operates Bar Patron, as well as Fratelli Fresh, El Camino Cantina, Winghaus and more. “After the initial enforced hospitality lockdown at the start of the pandemic, [in] our position at Circular Quay – which is peak tourism territory combined with a lot of office worker footfall – there was no way we could reopen, as that end of the CBD was unoccupied. We were gearing up to reopen in the middle of last year, when the second Sydney lockdown struck. Now … we feel we can confidently reopen and bring a reinvigorated Bar Patron experience to Sydneysiders and visitors to our beautiful city.”
The views and focus on premium tequila will remain. But the food and drink menus have been rebooted to lean more casual. You might expect dishes such as house-pressed tortillas wrapped around eastern rock lobster, tequila-cooked chicken, pork carnitas or chargrilled steak, all served with house-made sauces and salsas. You might also get scallop ceviche, tempura soft-shell crab, beef empanadas and barbacoa lamb shoulder cooked over coal. Fresh seafood will be brought in daily.

Cocktails have a good hit of Patron tequila – including the signature Patron Classic Margarita, with buyer’s choice of Roca or Platinum silver tequila. And the ultra-luxe, $100 Millionaire’s Margarita is likely to make a return, too. It’s made tableside and garnished with gold leaf. Tequila flights are expected to hit tables as well – or you can enjoy limited-edition tequilas served over ice.
Since Bar Patron served its last diners, Sydney’s Mexican scene has flourished – the Milpa Collective group now has nine venues, while others such as Rose Cienfuegos’s Itacate in Redfern, Tequila Daisy in Barangaroo and Ricos Tacos in Chippendale have made a mark. But Tucker says Bar Patron will stand apart.
“While Mexican cuisine has become even more popular, we anticipate our ... followers will return and new customers will be keen to explore the much-talked about Bar Patrón experience,” says Tucker. “For one, you just can’t beat those world-class views of Sydney Harbour from the whole restaurant, and particularly from the beautiful Carrara marble bar where guests can sit, sipping Margaritas and taking in those amazing views.”
Bar Patron is slated to reopen on April 27, 2022.
