Mode Kitchen & Bar is rising from the ashes of Pei Modern at the Four Seasons Hotel. Pei Modern closed in February after being open for two years.

Its replacement, due to open in July, aims to strike a balance between casual bistro and fine dining. Head chef Francesco Mannelli (Balla, est, Uccello) will be creating a menu of simple dishes made with fresh ingredients like calamari from South Australia, scampi from New Zealand and truffles from Tasmania.

The design is inspired by an era Sydney does well: 1920s Art Deco. Local design firm Luchetti Krelle overhauled the space on the Four Seasons’ main floor, adding velvet, polished brass, marble and leather finishes. Although the venue seats 200, the restaurant is intimate thanks to a fluted glass perimeter.

Besides the restaurant, guests can sit at the central bar, in the lounge, the chef’s table or in one of the two private dining spaces.

Mode Kitchen & Bar will open in mid-July for lunch and dinner, seven days a week.
