Guillaume to Close at the End of the Year

After only two-and-a-half years of operation, Guillaume is closing. In a statement released today, chef Guillaume Brahimi said the lease on the Paddington site was up and he was closing to focus on his other restaurants. The French-born chef opened Bistro Guillaume, a more casual version of his fine diner Guillaume, in the CBD in September.

His role as culinary ambassador to Public House Management Group has seen him write menus for the recently opened Bistro Moncur Mosman, for the original Bistro Moncur in Woollahra and for the Royal in Paddington. Perhaps he was spreading himself too thin to stay dedicated to his most formal restaurant, considering he also has Bistro Guillaume venues in Melbourne and Perth.

The final service will be on December 30.
