Most gelatarias have the same menu options – order by the scoop, sometimes with toppings and maybe you can order a take-home tub. At i-Creamy’s new CBD gelateria (it has closed its original Bondi Junction store) there’s a mysterious extra option: flower gelato. It’s a scoop of gelato that’s been sculpted to look like a rose.

“We do it petal by petal,” says Pichaporn Sapsittiporn, one of store’s co-owners. She’s holding a shoehorn-shaped silver spatula with the word “Amorino” (the name of a gelateria that started the trend) on it. She uses it to carve the flower petals from the gelato tubs. “You need the right angle,” she says. She creates a cavity in the gelato from which she can scoop out a petal. The petals she creates are carefully placed at the centre of a waffle cone, each new one arranged to weave into the next until the edge of the cone looks like the outer layer of a flower.

“It takes time but our customers really love it,” says Sasinuch Lapwongpaiboon (another owner). Depending on what flavours you want, you can have anything from a one-colour design to something more like the inside of a kaleidoscope. Lapwongpaiboon warns that the latter option is risky because once you’re a few licks in, all the flavours start to meld together. If one of the flavours happens to be durian then everything will taste like it.

Durian isn’t the only tradition-subverting flavour on the menu. “We are all Thai, so we wanted to develop Asian flavours,” says Lapwongpaiboon. Depending on what day you go (the gelato is made daily and flavours change accordingly) you might find some bright orange Thai milk tea; black sesame; or white chocolate made with miso. Sapsittiporn says Asian flavours should never be too sweet, and i-Creamy has adjusted its recipes accordingly. The ice-cream here is also thicker than that at most specialty stores.

i-Creamy’s new store also has a few seats. On one side there are leather lounges and a wooden bench. On the other, a brick wall and a constellation of hanging prints.
