Sydney will get a taste of New York this summer when acclaimed chef Jean Paul Lourde (from Manhattan’s NoMad restaurant) takes over the kitchen at Gowings Bar & Grill at QT.
Before finding himself on the pans at NoMad (the little sister of Eleven Madison Park), New Zealand-born Lourdes sharpened his skills under the tutelage of Alain Ducasse and Pierre Gagnaire. His eclectic, international approach to food is a product of a globetrotting life spent travelling through Asia and working in restaurants in Japan, London and New York.
Diners can expect dishes such as roasted snapper paired with slipper lobster and Persian saffron; Portuguese-style octopus with chorizo; and a classic New York-style cheesecake to land on their tables.
“It is about sourcing the finest produce and we have the best Australia has to offer – Rangers Valley beef, Cape Grim beef, Palmers Island seafood and Sonoma Single Origin bread,” says Lourdes.
The chef will also be plucking produce from the hotel’s rooftop garden.
Jean Paul Lourde will complete his residency on March 1.
