A Chinese restaurant by Jason Chan (Queen Chow , WaterDragon , Papi Chulo and El Loco) has opened in the buzzing food hub of Castlecrag Quadrangle Shopping Village on Sydney’s lower north shore.

At Canton Kitchen, Chan will be serving familiar Cantonese menu items – but giving them his own spin. That could mean entrees of silken tofu with vegetarian XO sauce finished with soybean floss and crisp wonton skins, or Peking-style roasted Aylesbury duck with pancakes. Mains will include garlic and butter Moreton Bay bugs, sticky Mongolian lamb ribs with herb salad, and kung pao chicken prepared with macadamia nuts rather than the traditional peanuts, along with dried chillies and Sichuan pepper.

“Canton Kitchen is all about celebrating the delicate and refined flavours of Cantonese cuisine while offering a unique take on the classic dishes that Australian diners treasure,” Chan said in a statement.

It’s the latest addition to the shopping complex, which is owned by Dr Stanley Quek, the man behind Chippendale’s Central Park development and its Kensington Street precinct. Already opened is Apera (a bar celebrating Australiana), modern Asian restaurant Bistro Mekong, and Chinese eatery Holy Duck (which also has an outpost at Kensington Street.

This year has already proven a big one for Sydney’s Chinese dining scene. Canton! Canton! just opened in the George Street space previously occupied by Tim Ho Wan , and Lotus in the Gardens is now serving dumplings in the wild surrounds of Haymarket’s Chinese Gardens. They'll soon be joined by a modern Chinese restaurant at Darling Exchange from the Golden Century family; Mo'st, a Chinese eatery serving a sandwich recipe that's more than 2,000 years old; and a Cantonese/South-East Asian takeaway joint from the team behind Canton! Canton!

Canton Kitchen is now open.
