Stepping inside Aqua S, Sydney’s newest soft-serve parlour, feels like walking through a cloud. Not because of the sky mural painted on the wall (though that helps), but thanks to the fluffy pillows of fairy floss that envelope its signature ice creams.
A quick look at the cups and cones of creamy blue swirls and it’s easy to see where the “Aqua” comes from. The “S” on the other hand stands for sea salt soft serve, the permanent flavour on offer. Owner and self-confessed “dessert hunter”, Jennifer Lam, first fell in love with the flavour while visiting Okinawa, a small Japanese island famous for its sea salt. “The one I tried was just plain in colour,’ Lam says. “And I didn’t think it was adventurous enough.” That’s why she decided to make hers blue.
Out of the three soft-serve flavours currently on the menu, sea salt is the only permanent fixture. It can be enjoyed by itself, or swirled together with one of the other two flavours, which will change every fortnight. Stop by before February if you want to try the lemon tea or biscotti.
Of course you can eat the soft serve on its own if you want. But the real fun starts when you add toppings. Choose from popping candy, flame-toasted marshmallow, caramel popcorn and fairy floss. Or if you can’t decide, opt for the (soon to be renamed) All You Can Eat option, which gives you a taste of all the toppings with a dark-chocolate waffle cone. It may also be the most Instagram-able dessert we’ve seen this year. Thankfully, it tastes as good as it looks.
