The Good Beer Company has announced its plan to sell the Dove & Olive to revamp a Randwick favourite, the DOG.

A representative from Good Beer Company says the group plans to use the money it makes from the sale to expand and redevelop the DOG in Randwick, formerly the Duke of Gloucester Hotel.

The DOG's website says the hotel, "is currently being restored with a fresh approach and inspired new offering". According to John Azar, as quoted by The Shout, The DOG team plans to open a new bistro restaurant and a courtyard cafe. Currently, the DOG menu lists chicken schnitzels, Sunday lamb roasts and daily $9.90 specials, as well as the evergreen meat-tray Friday.

The refurbishment of The DOG comes after The Dolphin Hotel's lavish reopening, and the recent openings – and new approaches to public-bar spaces – at The Paddington, The Unicorn and The Tilbury.

The Dove & Olive is just outside of the lockout zone, and the decision to sell was not affected by recent legislation in the city. It’s a surprising move considering the Surry Hills favourite is packed every weekend. The group must have a lot of faith in the much-loved Randwick pub.

Expressions of interest for the Dove & Olive will close on August 26.
