Italian fine diner A’Mare’s bar has been rebooted as A’Mare Cucinetta, a laid-back osteria where walk-ins are encouraged for snacks, wine and cocktails. In a space flooded with light from floor-to-ceiling windows, guests can get a taste of chef-owner Alessandro Pavoni’s elegant cooking in a more casual environment, whether it’s for after-work aperitivo, or a midweek bowl of pasta and glass of wine.

To start, graze on gnocco fritto (fried dough) stuffed with Wagyu bolognaise, mozzarella and Parmigiano; Sydney rock oysters with a pinot grigio mignonette; or antipasti boxes filled with salumi, cheese, marinated vegetables and crackers.

On the heavier side are pasta dishes like slow-cooked Wagyu bolognaise with spiral pasta and spaghetti aglio olio e peperoncino, or grilled beef tenderloin.

A’Mare’s entire beverage and wine list is available, but cocktails such as the Campari spritz, barrel-aged marsala Negroni and cinnamon Americano are well-suited for the venue’s breezy approach.

“Cucinetta is the perfect addition to the A’Mare space – a place where people can drop by for a casual meal with the comfort of knowing that they are getting authentic dishes using the best ingredients, as we do for A’Mare as a whole,” said Pavoni in a statement. “Like the
enotecas and osterias of my childhood, I want diners to feel relaxed in the space and be able to
use A’Mare for everything from special occasion dining to a bowl of pasta and quick ‘salute’.”
