Bars will use an array of tactics to get you through the door. They might boast of a cheap happy hour, or opulent interiors, or a stellar drinks list. The selling points are many and varied. But how many bars can boast that they've got the world's best bartender?
Bulletin Place will be able to make such a claim. Opening in November, the bar is brought to you by Tim Philips, who back in July took out the crown of the world's best bartender at the Diageo's Reserve World Class bartending competition in Rio de Janeiro. Along with partners Adi Ruiz (a 17-year industry veteran) and Robb Sloan (an 15-year veteran of the booze business), the trio are breaking out on their own and aiming to bring something special to Sydney's nightlife scene.
Bulletin Place will be located a block up from Circular Quay on the first floor of a lovely old heritage building. It will have a daily cocktail menu that will be based around seasonal produce and freshly-squeezed juices. So, what to expect? Well, the award-winning cocktail that sent Tim Philips to Rio was called a ‘Sesa-Who? Sesa-Me Sour’ and was made from lime and celery bitters, baby beetroot-infused Ciroc vodka and sesame oil aromatics. So expect things like that.
There will also be a biodynamic wine list featuring drops from NSW, and for eats there will be cheese boards and plates. The décor will include recycled items salvaged from the junkyard and the day's cocktail menu will be handwritten on butcher's paper hanging behind the bar.
Bulletin Place will open at 10-14 Bulletin Place, on November 29, from Monday to Saturday.
