Coming Soon: Three Blue Ducks Trades the Surf for Snow With Its Latest Outpost

The newest venue under the Three Blue Ducks ’ belt is opening later this month, this time in the foothills of the Snowy Mountains, just a two hours’ drive from Canberra.
The new restaurant will be part of Nimbo Fork Lodge, a boutique hotel that sits at the fork of the Tumut River and Nimbo Creek in the picturesque Tumut Valley.
Co-owner and chef Mark LaBrooy is heading up the kitchen, which will serve classics from the Three Blue Ducks’s menu made with ingredients that are either grown in the on-site kitchen garden (and lamb reared on the premises) or sourced from local producers in the Riverina, such as Provenir beef and trout from Tumut.
“Sustainability and ethically sourced produce is always a major focus for us, but with the launch of Nimbo, we want to create a space where the community can get involved, too,” LaBrooy says in a statement. “We’re really excited to cultivate the kitchen garden and create a space for the community and out of towners to come in and experience interactive activities during their stay.”
Dishes will include whole butterflied trout with capers, garlic, lemon and dill; and tomahawk lamb chop with zucchini, mint and spring peas. With fly-fishing spots nearby, guests can also bring in their catch for the team to cook and serve.
For drinks, expect wines and beers that champion local NSW producers, with coffee coming from Single O in Sydney.
The original Three Blue Ducks opened in Bronte a decade ago, followed by outposts in Rosebery, Byron Bay and Brisbane. A Melbourne location is also coming soon.
