Everything Dan Pepperell, Mikey Clift and Andy Tyson touch turns to gold. The team’s trio of diners – Pellegrino 2000, Clam Bar, Neptune’s Grotto – plus the recently closed Bistrot 916, were all instant classics. Today, they’ve announced their next: Grandfather’s, a restaurant devoted to Chinese cuisine in the old Long Chim space in Sydney’s CBD.

“Cantonese is well represented in Sydney because it has an affinity with the sea, much like Sydney,” Tyson tells Broadsheet. “There’s going to be elements of Sichuanese – so spicier stuff – but we’re doing it very tastefully. Essentially what I would say is the restaurant is an homage to Chinese cuisine, which we consider to be the mother of all cuisines. It’s the best, as far as we think.”

Back when David Thompson was in residence, the multi-level venue had space for 190 diners. It’s getting a complete overhaul before it becomes Grandfather’s.

The news comes just shy of five months after we started descending to the Grotto. “Neptune’s was a little bit delayed opening, and this has come into our hands probably earlier than we anticipated,” Tyson says. “This will open almost a year after [Neptune’s].”

While we have a name and a general concept, the finer details are yet to come. “We’ve got quite a big team locked in for it – it’s a large venue. I don’t want to give away any names [yet].”

Grandfather’s will open on the corner of Pitt Street and Angel Place in late 2025.
