S’wich Bondi opened to immediate queues. It was 2022, there was a day-to-night menu of sandwiches and salads, and friends Jordan Abram and Jay Fink realised they were onto something. The natural wine list was persuasive, too. After two-and-a-bit years by the beach, Abram and Fink are making moves, opening their second S’wich in Redfern’s freshly minted Wunderlich Lane.

In the new space, the brief will remain the same: a big menu of big sangas and big salads. The Schnit, the reigning bestseller, will be there with its golden crumbed chook and a chilli oil that’s crunchy with peanuts. As will the hefty caesar salad and Broadsheet favourite Bugz Bunny, the salad sandwich with sweet roasted carrots, dressed-up lentils and a rainbow of veggies. Yet-to-be confirmed Redfern exclusives will round out the new menu.

Just like Bondi, Studio Shand is leading the new fit-out. The buttery colour palette and wine-bar-style vibe is tipped to stay, though the pair say the space will feel like a new iteration of S’wich. An indoor dining room will spread to seating out the front and in the adjoining laneway.

Abram and Fink have no plans of stopping here, but they are taking it slow. “The dream is to expand further, but one step at a time,” Fink tells Broadsheet. “We want to make this site perfect. This is a great way to put our foot in the door.”

They’ve certainly picked the right place. Wunderlich Lane is adjacent to The Eve, the soon-to-open boutique hotel; and the two developments form an impressive dining precinct. Whopping Greek restaurant Olympus, from the team behind The Apollo, opened with an immediate buzz; and it’s tricky to get a table at Island Radio, where chef Andy Wirya serves a menu spanning Indonesia, Malaysia, Singapore and the Phillipines. At The Eve, the Bistecca team opened Bar Julius and Lottie, an all-day Euro-leaning hotel bar and rooftop Mexican restaurant, respectively, last week.

“This felt like the perfect fit,” Abram finishes.

S’wich will open in Wunderlich Lane – 2 Baptist Street, Redfern – in autumn 2025.
