We might have been sad to see Chur Burger vacate its digs at Manly Wharf and The London in Paddington recently, but it’s not so bad when you remember that the spaces were always meant to be rotating pop-ups for good food and good times.

With that in mind, the hotels have unveiled their next tenant … Burger Liquor Lobster, which opened on Tuesday in both locations.

Popping up for the summer, both spaces have undergone a revamp and now have a nautical theme (look out for glass buoys, crab pots and ropes) that points, in no uncertain terms, to the seafood heroes of the menu: lobster rolls, crab burgers and prawn rolls. There is beef, chicken, pulled pork and vegie burgers on the menu, too. Salt-and-pepper lobster rolls are kept simple with iceberg lettuce, lemon aioli and red onion, while the crab burger features crispy soft-shell crab, chilli Singapore sauce and Asian slaw.

All burgers are available in lettuce cups if you want to avoid the buns and there are salads offering a fresh take on prawn cocktail and the classic Waldorf. You can get your burgers eat-in or takeaway and each venue has its own selection of cocktails to wash them down with, such as The Littlest Mermaid (Beefeater 24 gin with lemon juice, ginger, raspberries and marjoram), and the Lychee Passionpit (vodka, lychee, passionfruit sorbet and sparkling). But be quick, because as with Chur Burger, this is just a pop-up and the end date is TBC.
