One of Sydney’s Best Ramen Joints Is Moving – Here’s Why

In May, Bayswater Road’s pocket-sized Bones Ramen announced it was ladling out its final brothy bowl sometime this winter. The building is being redeveloped, so the team had to wrap it up. Now the date’s been set: Sunday August 3 is the last time you can hit the Rushcutters Bay dining room for that funky prawn toast, fragrant chicken shiro shoyu ramen and juicy bavette steak with kombu-powered chippies.
Chef Jake Riwaka owns Bones with Mike Mu Sung (of Ken’s Continental and Farmhouse Kings Cross , just across the street). With their ramen nook and the now-closed pop-up Don’s Katsu , they created a tasty little patch on a leafy Bayswater Road block.
Since early 2022, Bones has delivered a tight concept: four ramens, plenty of snacks and a few specials, supported by exclusively Aussie natty wines, fan-fave beers and a friendly, casual service. They quickly made a name as one of the best ramens in Sydney, then kept the rep going with their cheffy kitchen collabs – with visitors from Porcine, Fontana and The Charles.
But it’s not all bad news. The team’s found a new address, and only a few blocks away on a buzzy little strip in Darlinghurst. The exact address is under wraps, but we can promise the new era of Bones will be bigger and moodier, and ready for you whether you’re after a quick slurp or want to stay a while.
Bones chef Sasha Tjonnadi, who’s been with the team long-term, is going all-in as co-owner with Riwaka and Mu Sung. And Ivan Pok, the ex-Rising Sun Workshop head chef who runs the floor on Bayswater Road, will be moving to Darlo too.
The menu will move beyond ramen – perhaps with a Don’s Katsu-style set ? – but it will remain compact. There will always be brothy bowls available, and that same super-crispy prawn toast, where a whole king prawn is wrapped in brioche and fried, then sliced to share.
“We’ve always loved being small,” Mu Sung said today in a statement. “This move is about giving Bones a bit more space to grow - not just physically, but creatively. We want it to feel like the Bones you know, just more of it.”
Bones Ramen’s final service at 4/51-57 Bayswater Road, Rushcutters Bay, is Sunday August 3. The new Bones space in Darlinghurst is expected to open in late August. More details to come.
