The man who essentially invented ricotta hotcakes and thereby changed Sydney’s breakfast scene forever, Bill Granger, is opening his third Sydney cafe in Bondi on September 17. With the sunny, “undone” aesthetic of his cafes, and the breezy, always-on-holiday vibe of his various cookbooks, it’s a wonder there hasn’t always been a bills in Bondi. In Granger’s own words, “I love [Bondi’s] mix of roughed-up urban beach glamour and down-to-earth local vibe. What could be more Sydney?” Indeed, and what could be more bills.
The cafe will include outdoor seating and a bar to maximise enjoyment of the balmy weather in summer. Acknowledging the devotion of customers to his classic dishes, he’s keeping the sweet-corn fritters with roast tomato, spinach, bacon and avocado salsa on the menu and adding dishes such as broken eggs with ricotta, spinach and pine nuts – the perfect dish if you’re the one broken on a Sunday morning after a big Saturday night.
Bills will also be open for lunch and dinner, serving gravlax with shaved radish, dill cream cheese and sourdough crostini, and a shrimp burger with jalapeño mayo, radish and sesame gochujang.
The neighbourhood has welcomed him with open arms; Gelato Messina is next door and as an opening-week special, it has re-imagined bills’ famous ricotta hotcakes as a gelato flavour which will be served at both bills in Bondi and at Messina outlets.
