This hottie has been on the menu at Noon since day one. And two years later, there’s no chance of it leaving, Tahini meets molasses, cinnamon and espresso, ready to be shaken with almond milk and frothed till hot. It’s a smooth, deeply golden pour that’s nailed the sweet-savoury dance – only carried further by the nuttiness of sesame.

Ca phe muoi from Ca Phe Mai, Double Bay
Day-to-night newcomer Ca Phe Mai is heavily influenced by co-owner Cindy Mai’s Vietnamese roots. Just peep the signature hot drink: ca phe muoi, a riff on Vietnamese salted coffee, with an ultra-silky aerated body of condensed milk, cream and a precise amount of salt. It’s given an Aussie spin with Single O’s Yeehah! Blend, which is powered in part by rrobusta, the intense coffee species favoures in Vietnam. Sweet-scented tonka beans are grated on top for a photo finish.

Cardamom hot chocolate from Angus, Marrickville
Velvety liquid chocolate with a light, floral spiciness? A marshmallow bobbing on top? Ding, ding, Angus. This back-lane winner satisfies any nostalgic cravings, while keeping the brief firmly in adult territory. There’s the base of cream, infused with cardamom overnight, plus the premium Callebaut dark chocolate. The kicker, though, is the rectangle of house-made marshmallow, which arrives with a torched cardamom-sugar crust.
