Morgan McGlone (Belle’s Hot Chicken) and Malaysian hawker-style restaurant PappaRich have teamed up in the name of fried chicken.

The culinary invention came about when McGlone, a long-standing fan of PappaRich, was approached by the Malaysian restaurant to work together on a fried-chicken sandwich that would rival all other fried-chicken sandwiches.

After spending weeks testing different techniques and recipes they settled on a juicy fried chicken thigh served with Malaysian-style slaw – drenched in coconut vinegar – between two slices of PappaRich’s white and fluffy sweet Hainanese bread (spread with salty butter). It’s all topped with bespoke “Pappa Mac” sauce. And then fried again.

Pro eating tip: have a couple serviettes on stand-by. It’s greasy.

The “ultimate fried-chicken sandwich” will be available at both the PappaRich store on Broadway and the Liverpool Street store from Monday April 9 until June 18.
