Nick Hildebrandt and Brent Savage, the duo behind Bentley Restaurant & Bar, Monopole and Yellow will open a new venue in September. It will be a seafood-focused restaurant in the space currently occupied by Noma at Barangaroo.

The cloud-shaped harbour-front Anadara building, Noma’s home for a 10-week residency, is one of the few seaside locations left in the city. Hildebrandt and Savage saw a rare opportunity in Barangaroo’s flourishing culinary environment. “It’s a privilege to be inside that space,” says Savage. “[Lendlease] has put a lot of time, effort and thought into the food precinct that will exist there.”

The yet-to-be-named restaurant will seat around 100 people and will have a bar and outdoor dining area. Expect an impressive wine list, developed by Hildebrandt, also a sommelier.

“It’ll be the same casual and approachable style as Monopole, but with a seafood focus,” Savage says. “We want it to be one of Sydney’s leading seafood restaurants.”

Savage and Hildebrandt's restaurant is due to open in September this year.
