You have until Sunday May 30 to dine at the Mediterranean-inspired vermouth bar Banksii. After five years in Barangaroo, owners Rebecca Lines and Hamish Ingham have decided to close the venue to make way for something new.

In a statement, co-founder and sommelier Lines says the time was right to “have fun and mix things up”. The pair will be closing the doors on Banksii Vermouth Bar & Bistro at the end of the month to make way for their new Mexican-inspired concept, Tequila Daisy.

Due to open in August 2021, Tequila Daisy is a chance for the duo to “experiment and explore our obsession with Mexican-inspired flavours”, says Lines. They’ll be announcing more details on the new outfit later in the year.

For now, if you’d like to make the most of the light-filled eatery and have one last round of Sydney rock oysters with dry vermouth or crisp sardines with a smoky roast-garlic aioli, we suggest you make a booking soon.
