If you’re a regular at Bondi Farmers’ or Eveleigh weekend markets, you’ll already know that Tina Do is synonymous with some of the best pho in Sydney. But now Do is bringing her skills and experiences of Vietnam to the courtyard that houses Foundry in Surry Hills. The six-week Bar Pho pop-up is bringing together some of Do’s favourite Vietnamese food experiences.
“It’s about creating a little, authentic Vietnam feel, where you can go to a pho place, a skewer place and a pork-chop and rice place all near one another,” says Do. “So there will be three or four signature dishes all in one place.”
The courtyard environment of Foundry means that Do can create a series of stations with collaborators that include Young Henrys and Trolley’d.

SIGN UP“I wanted my own bia hoi. A basic translation is ‘on tap’, so we thought why not do a local craft beer? And the team at Young Henrys were really excited. They even made an authentic bia hoi keg for us. So there will be a bia hoi station, a skewer station and a pho station.”
Do was keen to create a hidden laneway and market vibe for the pop-up, pointing out that it is crucial to the Vietnamese experience.
“The best places are always hidden in the laneways, but the locals know where to look. I want people to be transported to Vietnam.” That includes signage in Vietnamese, but with a hint of the Australian thrown in, too.
“We’ve got the Trolley’d boys with their cart doing cocktails, which is a bit like our pho cart,” laughs Do. “They’ll use some of the spices that I use for the pho. But they’re about the natives too.”
The pop-up will run for around six weeks – longer if things go well – and will be in action Friday and Saturday afternoons and from midday on Sundays.
