Warren Burns and James Bradey, co-owners of Sydney venues Grandma’s, Wild Rover and Wilhelmina’s are opening a burger joint. But unlike its competition the team has eschewed the American influence. Instead it is embracing childhood nostalgia and the local neighbourhood: Balmain. Burgerhood will take over half of Wilhelmina’s.
Like with Wilhelmina’s, food, not booze, is at the heart of the business. “With every venue that we’ve opened we have replicated where Warren [Burns] and I are at in life. We opened Grandma’s when we were young and into cocktails. Now we both have little kids. We wanted to open somewhere to take our families but also have a good time,” says Bradey.
Burgerhood will serve beers, wines and ciders. “And of course we’ll have milkshakes,” says Bradey, “That was really important to us. We are both ’80s kids and wanted to tap into that nostalgia for going down to the beach and drinking milkshakes."
According to Bradey they will be “thicker than milkshakes, but not quite thickshakes.” Flavours will include banana, vanilla, strawberry, peanut butter and Milo.
Burgerhood will also stock vanilla soft serve. Every meal will come with a free cone. If you want more than one, give a gold-coin donation to the local primary school.
Despite the Australian inspiration for much of Burgerhood, Bradey and Burns did their research in the US. “We wanted to see how different parts of the States used different sauces, spices and pickles in their burgers.”
The Burgerhood classic will feature a Mary-Rose-like sauce (a sauce that is traditionally served with prawn cocktails), house-pickled red onions and a half-chuck, half-brisket patty filled out with smoked bacon fat, all sandwiched between a potato bun.
It joins a lengthy menu that includes a fish burger (IPA-battered ling served with a smoked-mussel tartare sauce) and a vegan burger. Burgerhood has found a nut cheese that melts like dairy and settled on a red bean, brown rice and beetroot patty topped with a skordalia (a garlic, almond and potato) sauce.
Burgerhood will open Saturday November 25 at Shop 1/332 Darling Street, Balmain. From 12pm to 2pm it’ll be giving away free burgers.
