Just In: Baker Bleu To Open in Bondi Before the Year Is Out

Baker Bleu’s been a Sydney favourite since it opened on a Double Bay street in 2022. Owners Mike and Mia Russell had already won over Melbourne – Mike’s been baking his deep-brown crusty loaves, wheels of country rolls, naturally leavened pastries and more since 2016. More bakeries followed, before the couple ventured north in collaboration with Neil Perry. The founding team took full custody of the Sydney bakery in late 2025 – and now Baker Bleu is expanding across Sydney. First up is a shop just up the road from Bondi Beach.
The new Baker Bleu kiosk will be a grab-and-go situation, with no baking done on-site, a format that’s done well for the team in South Yarra. You’ll find a spread of pastries, bread and sandwiches, along with Market Lane coffee, iced drinks and swirls of soft serve. There’ll be outdoor seating with room for 20 too, if you want to stay a while.
The new spot, currently being given a signature Baker Bleu refit, will live up near bookstore-slash-cafe favourite Gertrude & Alice, and opposite Bills. This won’t be the last of the Russells’ bakeries for Sydney, with more planned to follow in early 2027.
Baker Bleu will open at 34 Hall Street, Bondi, in December 2026.
