Sydney brewers Endeavour Vintage Beer and Sydney hospitality pros Applejack Hospitality, (The Butler, The Botanist and Della Hyde among others) are collaborating to open a new venue at the former King’s Head Hotel site in Sydney’s colonial nucleus, The Rocks, in November.

Endeavour’s founders Ben Kooyman, Andy Stewart and Dan Hastings got to know Applejack’s Hamish Watts and Ben Carroll from stocking their beers. The result is The Endeavour Tap Rooms, a new brewery, bar and restaurant. The beers served will be harvest-led, which means every year seasonal hops and grains are used to make them.

The Endeavour Tap Rooms will be designed by architecture firm Welsh + Major. “We want to work a more contemporary vibe into the space and use modern finishes and furniture; not get trapped in the colonial expectations of the area,” says Kooyman.

“We won’t just have pub style food. We’ll have a few classics but complement them with modern-Australian menu items,” he says. “The look and feel of the venue will be an evolution of what you can find in the venues around us.”

Beer brewing will be done on-site, too. In the dedicated brewing space (where the old bottle shop used to be) there’ll be a 600-litre brew house with eight tanks. While OH&S prevents full tours, there will be tables and bar stools in the brewing space so people can enjoy a drink in the brewery.

“We’ll be brewing on-site three to four times a week. There’ll be beers produced on-site that won’t be available anywhere else,” Kooyman says.

The Endeavour Tap Rooms is slated to open in November.
