The American burger invasion continues, with Melbourne’s Royal Stacks arriving in Chatswood on August 31. Dani Zeini is behind Royal Stacks, which currently has venues in Melbourne’s CBD and Brunswick (which is halal-certified). He’s well versed in American diner fare – burgers in particular – flipping patties at the family-run Dandenong Pavilion before cooking at well known Melbourne burger joints Grand Trailer Park Taverna, Easey’s, Truck Stop Deluxe and Motorhome Majestic.

It’s a solid CV but still begs the question: what will set Royal Stacks apart from the many great burgers that already call Sydney home?

Patties will be minced daily from pasture-fed, GMO and hormone-free beef from Aussie farmers via Vic’s Meats. The burger menu will remain true to the Melbourne outposts, with the Single Stack (beef patty, tomato, butter lettuce, American cheddar, pickles and their special house sauce); Prince Harry (horseradish, shallot and gherkin mayo sauce) and the truffle-infused Miss Elizabeth all making appearances. Even The King, with its gooey-centred, crunchy-edged mac’n’cheese croquette, is coming over.

“The mac’n’cheese croquette is the ultimate comfort food, and goes great inside a burger or even on its own,” Zeini says.

There’ll also be potato gems, waffles and frozen custard, with three new custard flavours created exclusively for Sydney: Nutella Swirl, Ferrero Rocher and cookie dough.

“We're still working with Mark Mariotti from 7 Apples [a gelato store in St Kilda] and having a lot of fun tasting all his creations,” Zeini says.

Royal Stacks is opening in Westfield Chatswood on August 31.
