Complete your Christmas meal with a huge trifle from Andy Bowdy’s Newtown bakery Saga.

This version of the traditional Christmas dessert is set in a glass bowl and serves 20 people. And it’s shaking up tradition by coming in three different flavours. The first is tiramisu. Then there are two inspired by Bowdy's grandparents. The Ted is made with chocolate-fudge cake, white-chocolate marscapone, morello-cherry compote, Nutella cremeux, candied-hazelnut and chocolate crumb. And the Cath is made with Nan's Sponge, vanilla chantilly, passionfruit curd, mango bavarois, salted-coconut cream, coconut chew, tropical fruit and brown-sugar pecans.

“They’ve got everything – booze, cake, fruits, chocolate, custards,” says Bowdy. It takes nearly two hours to assemble.

“I wanted to do something that evoked my past, something I grew up with,” says Bowdy. “I get a lot of cake orders around this time and wanted to make something people can travel with, take and share. The glass bowl helps with that.”

Messina also just released its own take on the trifle.

The trifle can only be ordered online. Pick up is on Christmas Eve.
